How to uninstall what?
Roon Core, Roon Remote?
On what is it actually installed?
On Windows, iOS, Android, iPhone, Linux, ROCK?

To uninstall Roon, simply remove it like any other application on your platform. If you also want to remove the database and all associated data, you can find its location here: Database Location

And to uninstall it on Windows, you may first have to stop the Roon Server process, e.g., from the Windows Task Manager.
