While the more serious error with macOS 27 was fixed in the latest Roon update, the general issue with missing/inconsistent macOS network permissions was probably not - this has been happening (at least occasionally) after macOS and Roon updates since Sequoia. Try the usual workaround, maybe it helps:
Check Roon’s Local Network Permission
macOS controls which apps can find devices on your network through a permission called Local Network access. After some macOS updates, Roon or Roon Server may lose this permission.
Open the Apple menu and select System Settings.
Click Privacy & Security in the sidebar.
Click Local Network.
Check whether Roon and Roon Server are both listed and turned on.
If they’re already on, turn each one off, then back on.
Restart your Mac.
Open Roon and check Settings > Audio again to see if your devices appear.
Considering that you favorited my post, I assume that the permission workaround helped. Unfortunately, this seems to confirm that the recent fix for macOS 27 did not solve the long-standing permission problem and this still needs fixing. Tagging @Stephen
