Is there somewhere under MacOS (RoonCore) a file where the general settings (album settings, playback actions, etc.) are saved? In the backup this information is not stored.

Apologies for the delayed response here.
These settings are saved in the Roon remote app of the device itself. Roon only backs up Core settings when performing a backup, and per-remote settings are not saved in the database. You would need to configure this on each remote separately when you launch Roon for the first time on the respective device.
