I would like to run my Family Room system via USB and Music Streamer DAC from on Mac mini port and my Office system from another USB port on the same Man mini with an audioengine DAC. Will this work?

Yup, no problem.

I run hdmi to my processor and via USB to a dac with different amp and both setup under Roon bridge

BUT when one is unable to play a specific bitrate then it all drops to the highest common supported level…assuming you have them in a group
