after windows app did not show any of the features, I deleted Roon remote from the iPad Pro and re-installed after a restart of the iPad.
Since then (for roughly one week) Roon apps have run stable on all devices, although I tortured all combinations.
It seems it was a flawed initial installation on the iPad Pro.
Let’s keep finger crossed.
