I run my backups all the time.
I am using a SonicOrbiter that is getting a little long in the tooth.
I am just running Roon Server on the SonicOrbiter.
My music is all stored on a NAS.
I am also considering your Nucleus as a backup.
Is it possible to have my Roon license running on two servers at home?
Is there a white paper on how to copy my library from my SonicOrbiter to my Nucleus?

With one license, not at the same time (but why would you). However, you can switch your one license between servers as often as you want.
You can have both servers running, but can only authorize one at a time with a single subscription. Backup your existing server to a drive or networked location, then restore that backup to your new server. You can very easily switch from one server to the other by clicking to authorize one and unauthorize the other.
