Is there not a way to have a playlist that is automatically updated to include all tracks that have been marked as a favorite (“heart”)? Really enjoy using Roon for playback - provided tracks are either presented, searched for specifically or general browsing. However, for all those tracks that have been marked as a favorite (“heart” selected), being able to just kick off a playlist in shuffle mode that contains all tracks marked as a favorite would be a huge win.

This appears to be a missing component (at least within the GUI). The fields can be utilized for playlists appears to lack fields that are available in other parts of the GUI.

It is already there.
Go to track view, right from Focus, click the heart symbol. All your hearted tracks will remain.
Click on the down arrow of the Play Now filed. Select shuffle and of you go.

Playlists in Roon are static. You can get dynamic “lists” by saving (Bookmark) selections (Focus and other special cases like Favorites and Tags).
