This clearly inducates to use mutiple same-keyed metadata fields for e.g. the ALbum atrist. SO in my case of the album “Menuhin & Grappelli Play Berlin, …” I should enter:
ARTIST : Yehudi Menuhin
ARTIST : Stéphane Grappelli
instead of
ARTIST : Yehudi Menuhin & Stéphane Grappelli
But how can I do this in XLD when ripping? – Or do I need to do this later with another tool?

So I guess I cannot do this with XLD? So I better use another tool after ripping (but before importing into Roon) to get the Metadat in the best shape for Roon, right?
Where do you get that impression from? Roon understands multiple entries in a single Artist tag provided you use the correct delimiter to separate the entries. As @BlackJack says, ‘&’ is not a recognised delimiter, the usual delimiter used is ‘;’ (a semicolon) - try that.
Finally, note that it is nearly always better to simply put separate values in separate tags. A file with two ARTIST tags instead of Artist1; Artist2 will be more easily and unambiguously understood by virtually all software.
