How to (re) add Ropiee extension to Roon?

The Ropiee side is working fine as is unless rebuilding it automatically adds it to the extension list in Roon?

Just to make sure: have you properly configured the right zone in RoPieee? If you leave it on ‘unknown’ the extension will not show up.
