Today i run Roon on a intel Nuc with Win10, the system runs on the SSD drive, my music is stored on a second harddrive an ssd.M2.
Roon doesn’t care how many drives you have.
If there is room and the necessary motherboard connections in your NUC, then you can have as many drives as you want.
