Using Roon’s DSP options, is it possible to set different parametric eqs per channel? To compensate for hearing imbalance?

Yes. It is possible using a desktop client to configure different parametric EQ for each channel on normal Roon Zones. It is not currently possible in ARC.
Create a Procedural EQ filter and then, within it, create a Parametric Equalisation operation for each channel. E.g one I created just for illustration:
