Intel NUC have an auto on feature in the BIOS. If the NUC loses power etc, this feature turns the machine on automatically (Ie for server and remote access situations). Check it’s not active.
Another possibility is that the NUC BIOS has Wake-on-LAN enabled (which it probably has by default) and some other machine on the LAN is sending a Wake-on-LAN command to the NUC’s MAC address. Seems unlikely because this would have to be set up by someone and you probably would know, but it’s a possibility.

@Suedkiez - I have Wake-On-LAN enabled in the router and using the app “Wake Me Up - Wake-on-LAN” in the morning (if it is not already on )
“Start this computer automatically as soon as it is accessed from the internet” is enabled
This is for starting the NUC from outside the LAN, while regular WOL is accessible only on the LAN. I think if this is checked, the Fritzbox sends a WOL signal on the LAN if there is a connection attempt to this device coming from the internet.
Maybe this is caused by a periodic access from the ARC app? Does the behavior stop if you uncheck this?

I have had the exact same experience. Fritzbox as well. I turned on the setting you show when ARC was launched to be able to turn on my NUC when I am not at home. I never used it. However, some weeks ago I also noticed that the NUC turned itself on at night. WHat in hell… Since I turned off this feature it hasn’t happened, as far as I am aware.
I never questioned what it who would try to access my NUC at night… strange.

You should try and stay awake, sitting next to it. So you know the exact time it happens. Then repeat for three weeks and see if there is pattern. Knowledge is sometimes hard to come by

Just run a ping on another PC to the NUC’s IP without a timeout and redirect the output into a file, you will see the exact time stamp when it starts responding
