How do I use the PreBox S2 Digital as an end unit?

It’s a DAC and preamp. You cant stream from it. You need a source to feed into it. Plug your Mac mini into it via USB. It will show up as an output option in the audio section of the core.

This is correct, you will need to connect the DAC to the Mac Mini via USB and then enable the PreBox S2 in Roon Settings -> Audio and select it as the active zone, more information on this process can be found here: https://kb.roonlabs.com/Audio_Setup_Basics
