I need to configure Roon for WAN access.
I found access about port forwarding, but, where can I set my public IP in Roon settings?
I don’t find this parameter.

This is not supported. Roon needs a flat network topology (all devices in the same network) to work properly. Your best bet is maybe a VPN. There are already some threads that cover this, but the use with VPN is also not supported.

ZeroTier setups might work but you have to have it on windows/Mac/nas/Linux core machine and remotes only work with windows or Mac no mobile devices, well maybe android.
I have personally used with windows core and Mac remote over external connections but YMMV
Again none of this is supported, but if you find something else that works please feel free to document it sufficiently for others to try
