I am using a NUC and it looks like I need to replace the NVME SSD. Once I purchase and replace the drive in the NUC, how do I transfer the software? Is it as simple as restoring from a back up, or do I reinstall from rock screen, or do I need to install the operating system using etcher and all of that?

Be sure to follow this carefully - in particular the step that says:
Since this is your first time launching ROCK, you will be asked to log-in when you connect. Instead of logging in, click “Restore A Backup” in the lower-left hand corner
