Roon 1.8 is no longer supported at this time due to security vulnerabilities. It’s been fully deprecated.

Is there a specific reason you’re eager to downgrade? If you’re using an older, Intel-based Mac that can’t run the new Roon release, we recommend using OCLP to patch an update on the Mac to MacOS 12.

If you are only hosting Roon Remote on this Mac, you can also download a temporary installer for the previous Roon build (before the minimum requirements upgrade) here.
