When I have used a Mac mini as a Roon core, I back up and restore to the local copy of Dropbox (not the Dropbox interface in Roon). On ROCK it seems there is no way to access local files, so it is pulling files from DropBox 1 by 1. Am I understanding this right? Is there any work around to allow ROCK to see my Mac laptop hard drive and restore from the local files not pull from the DropBox service?

If you have a local copy of the backup on the Mac Mini or MacBook, then it’s best to share this folder so ROCK can access it.
You need to choose Windows (SMB) file sharing.
That’s what I was after! And then that volume (drive) will show up in Roon for restore, right?
