I’m on Roon 2.65 and had no issue updating to it on the same NUC server but trying to update to 2.66 fails.

You can try going to ROCK‘s admin web page and click the Reinstall button. This often fixes this issue.
This reinstalls the OS and Roon Server together, and thereby updates to the latest version. It does not touch your database, so it’s safe.
