Thank you for your post.

Can you connect to RoonServer if you disable the VPN? Consumer VPNs can sometimes sever the remote connection to the server.

Our diagnostics servers show that the remote initiated a handshake with the server in the last set of logs. Have you been able to connect to RoonServer from another remote on this network?
