I installed Roon on my windows laptop and then on Fiio R9. I wanted to to use DSP settings. However, I can not see full menu on R9 since it does not have landscape display mode. I made front and display size small but it did not help. I also connected R9 to external monitor but it did not help either. Is it possible to play with DSP/Muse parameters on laptop and use them on R9?
Yes you can do this. DSP settings are per zone and the FiiO is just another zone. Please make sure to select the desired zone for playback first and pay attention to the zone’s private setting if she doesn’t show on your laptop.

The DSP settings are only accessible for editing/changing from a tablet like an iPad or the Roon client on your laptop.
I have a FiiO R7, the Roon Ready feature pre installed just acts as a zone. If you have downloaded the Roon app, this will not give you access to edit/change the DSP settings on your R9. You will only be able to enable/disable them.
The HDMI in and out connections are not capable of displaying the R9’s screen. See below for greater information on this.
If I understood you correctly, firstly I will choose R9 as a zone then I will change DSP settings on laptop or ipad then those setting will be available on R9 while it plays.

Yes, as @BlackJack mentions, make sure you select the R9 zone settings for the DSP changes.
For Roon, the Roon Server will be the player and also applying the DSP (exception Volume control) for all the Zones. The Zone device is just a simple/dumb “play as you get it” device.
