I noticed that anything I am doing in my DAW (digital audio workstation, I work on my own music with Ableton Live 9 software) is being added. I only have it set to add music from my iTunes library. I know for sure the audio files from my DAW are not stored in the iTunes folder so I’m not sure what is going on here.

Where are the DAW audio files stored?
Double check in Roon --> Settings --> Storage that this location is not being watched.
In Roon if you right click (long tap) on one of these tracks, you can select file info. This will display the path to the file, which may help diagnose what’s happening here.
