Now that I’ve learned to create 2 profiles, is there a way sort/move my partner’s music/albums/favorites out of my profile and move them on to his, so we can have our own daily playlists?

Yes, you should be able to turn of the Shared Playlists/Tag toggle under the My Stuff Tab:
