The Sonos’s seem to have good signal but as I listen through my library it can happen that the next track starts like 15 or 30 seconds in… Also from time to time the track I’m listening to will suddenly stop and skip to the next track.

Please note that your core is not on a supported platform. Accordingly, I have moved this thread to #tinkering, since you are more likely to get a community response there.
Incidently, the single thread performance of your Xeon is lower than an entry-level i3 NUC, which may contribute to the performance issue. However, it would be helpful if you stated the resources allocated to the core, the type of disk the database uses, and the location of your media files.
It’s on an UNRAID box that has a Docker Container, that same box houses all the HDDs (NAS rated drives but not SSDs)
Since it’s in Docker it just takes the RAM and CPU cores it needs. If Roon runs single threaded that’s kinda not great but it is what it is.

This is the likely cause of your problems; the Roon database needs to be on an SSD.
This doesn’t seem to be a Roon issue, this seems to be a Roon and Sonos talking to each other problem. Which as I’ve read a lot more on recently is kind of just is what it is kind of situation
