When I use Listen Later (which I am still exploring), my most common use case is to tag a track in an unfinished album as my next track in LL. When I got back to that track, LL plays that track, but not the rest of the album. Can I use LL to bookmark the track and resume playing that album when I launch it with LL?
Not from your description. If you mark 1 track in an album to listen later then initiating play from the Listen Later screen will only play the track marked. If you want to play the rest of the album, then you should mark the remaining tracks to Listen Later; and in that case initiating play on the Listen Later section will play the tracks you marked.
So, instead of marking one track, mark all the remaining tracks. You can select multiple tracks, then go the 3 dot menu and “Add to Listen later”.
Thanks to @Benjamin and @Rugby for the guidance. That makes sense.
A few follow up questions:
I can select multiple tracks on the Mac for LL, but it appears that the tracks that are queued up are in reverse order. How do I get Roon to play the remainder of the album in the correct order?

How do I get Roon to play the remainder of the album in the correct order?

By selecting them in the correct order. You are essentially adding individual tracks to the Listen Later Queue in order of them being added. If you select the tracks in sequence, then the first track goes on LL, the next track, and so on. This results in the Listen Later being reversed.
You can then select them in the order you want them to play on the Listen Later Page and once highlighted in your preferred order, click Play Now. OR, you can select them to add to Listen Later in reverse order.
Maybe some pics will help.
A. Taking a new album I got Lightnin’ Hopkins “Lightnin’ Strikes”. Here I am selecting tracks 3 to 5 (in order) and adding them to the listen later Q.
At this point, if I had instead chosen the three tracks in reverse order on the album page, then the tracks would be in the album order on Listen Later.
C. However, you add them to the actual Play Q by selecting the order you want on the Listen Later Q. So in this case, I just selected the track “Cotton” and up and then went play now. Which gives the actual playback Q in the correct album sequence. Like so…
This brings up the little known fact that Roon adds things in the order selected when selecting muliple tracks at once. I could for example, have selected track, 3,5, and then 4, and that would have been the order when adding to a Queue.

using Roon ARC on my phone. How do I select multiple tracks?

I don’t think so, at least not for my Android phone. But, I don’t use ARC at all. If I did I would just tag the whole album at that point.
