Roon had to update some foundations and your outdated macOS does not support these anymore, because it is end-of-life by Apple.
You can temporarily reinstall Roon version 2.64, which works with your outdated macOS. The download link is in the release notes:
You will then need to make sure to deactivate automatic updates in Roon Settings > About.
Then make sure you have a safe Roon database backup on a different device (such as an external USB drive).
Going forward, you need macOS 12 (Monterey), but most old Intel Macs that don’t get the update from Apple can easily be updated with Open Core Legacy Patcher (OCLP):

As @Suedkiez mentioned our recent platform migration to a newer framework means Roon now strictly requires macOS 12 or newer. We understand this can be frustrating when you are running older, stable hardware.
The community suggestion above is exactly the right path forward:
Crucial Note: Please treat this legacy version only as a temporary solution—ideally to gain access to your current database, create a fresh backup, and prepare to migrate your Roon Core to a supported machine or OS. Roon requires version parity between the Core and its Remotes. Any other devices you use (like your mobile phone or tablets) that automatically update to newer Roon versions will soon be unable to connect to a 2.64 Core due to the version mismatch.
Please let us know if you have any trouble getting the legacy version installed and running!
Thanks. On the “Crucial Note” part. The machine running my core is older hardware and the macOS won’t upgrade to 12. I don’t plan to replace it. So no upgrading Roon core for me. I use it until it stops working and then fallback to my SONOS library manager which has better backward compatibility (and less of style and features and other conveniences). It was nice while it lasted.

Thank you for those pointers regarding OCLP. Very interesting. Had no idea one could do this with macOs of all OSes. But that’s not for me. If I have to go down that route, I’d prefer to move the whole media server (which runs Plex and SONOS and emby) to Ubuntu. Darn… I might even give Roon linux a chance. But that’s way too much effort I’m willing to take right now, just to get Roon happy.
Backward compatibility is that sort of hill for me.
That’s of course another good option if it’s just a server. Probably less work than OCLP, too. The OPLC route is more useful to those who want to keep running the graphical Roon app (or macOS generally) on the same machine as well.
