I read that Roon will notify the user when a software update is available. How does that work when running Roon Server though?

Yep, pops up on any Remote. I usually shut everything Roon down. Back up my database and then hit upgrade all. iOS updates have a different timing, a few days after other platforms, in order to secure App Store approval.
