Every time I start Roon on my iPhone, the volume of the iphone itself is altered into 100%.

Thanks for taking the time to write in! I wanted to let you know that we’re aware of this bug and are currently working on a fix 
In the meantime, I would suggest taking a look at this thread for short term workarounds:
