How does Roon acquire its credit metadata?

They don’t get metadata from Tidal at all (I’m not sure about Qobuz but guessing the same):

Roon displays information sourced from our metadata providers. It’s worth noting that TIDAL doesn’t share their credits data with us. The amount of data available varies from one recording to another, and sometimes we may have more data than TIDAL, while in other cases, they might have more information than us.

AFAIK the credit and other metadata sources for Roon are only TiVo and MusicBrainz. TiVo‘s database is partly (for US) the same as Allmusic.com but has non-US data (and maybe other stuff) on top of that.

Discogs as a source is often requested by users because they have lots of data that others don’t, but their data is not very structured and it’s therefore difficult to work with the API.
