Same experience. Was running 2011 Mac mini. Since moving to NUC with ROCK 4 years ago, have had a very stable system.
Soundwise - i can’t detect any difference.

You might be better investing the money into a good Mesh set-up to significantly improve the throughput of wireless around the house.
Something like the Orbi with 3 separate wireless radio’s will give you dedicated backhaul around the house so you can plug in the endpoints to one of the endpoints and have what feels like dedicated Ethernet to various rooms. This is what I use and very rarely ever have a dropout even when running 24/96 around the house.
Your milage may vary of course but I use this in conjunction with Rock on a NUC and have had an extremely reliable Roon setup for the 2+ years I have had this working.
If you cannot run Ethernet this is pretty much as close as you can get to the reliability in my experience.
