But why is it showing only three artists next to the studio as if only they performed the album when the files have all the available metadata embedded? (By the way I have all the import options on Library set to prefer file)

This line appears on the Album Details → Tracks tab. It is automatically generated using the ALBUMARTIST and PERFORMER tags from your file metadata.
In your case, one individual is listed under ALBUMARTIST, and two under PERFORMER, so only these are shown in that summary line.
Please note:
The Credits tab on the album page does include all contributors correctly:
All personnel listed in the file metadata appear under “Also performs on [Album Title]”.
Composers and production roles are also displayed, based on the tags present.
Roon parses the metadata as expected and organizes contributors by category for clarity and easier navigation. If you’d like to see more individuals listed in the “Recorded at…” line, you’ll need to add additional PERFORMER tags in the file metadata accordingly.
