I have connected a Chromecast Ultra to HDMI port of Intel NUC, running Roon Server (1.5 build 354)

The Mac Roon client (1.5 build 363) sees the Chromecast & I have been able to access the Chromecast from Google Home (on my phone). From Soundcloud on my phone, I can cast to the Chromecast.

I’m trying to stream Soundcloud music to speakers connected - via ethernet - to the NUC. Is this possible?

No. Please recognize the difference between HDMI source and HDMI sink. The NUC is an HDMI source – it has an HDMI output. A TV, for example, is an HDMI sink – it has an HDMI input. An HDMI Chromecast can be connected to the latter, not the former.
