You can have a Roon Core (the Roon Server) installed on more than one computer, but only one can be active at any one time - your subscription is coupled to the active Core/Server.

And if you have the Roon Server running on one computer, you can use as many other computers as you want for remote controlling Roon

Typically, Roon server runs on a single computer with Roon control installed on multiple devices. However, you may install Roon server on more than PC, but only one may be used at a time if you hold a single licence.

To use an alternate Roon server, the other needs to be deauthorized first.

This is part of the confusion that the new Roon software configuration was meant to clarify - you can only have one core/server per license, but an infinite number of endpoints and remote controls. Right now on Windows/Mac the software is the same file for both and just depends on what you configure when you install or launch it.

The new version of the Roon software separates core/server from remote control and so it’s clearer you can run the server only on one machine but have an infinite number of remotes and endpoints. But that new version was stopped due to QC issues and problems with the rollout.

And, you can run server/core on more than one machine, but only one at a time - you just have to tell Roon to unregister one as you launch the other.
