I honestly don’t know how to bypass Ruckus. I’m not sure the connection ever gets to Ruckus remotely (obviously could be wrong). Here’s how my system is set…Infinity modem that then connections to to My LUXUL EPIC 5 Gigabit Router that then connects to my XMS-2624P Gigabit Managed Switch. The Switch then has a connection to my Ruckus ZD1200 Zone Director and the Zone Director then has 2 Ruckus Wireless Access Points connected by ethernet delivering a wifi signal to my house.
Note my images. IMG1459 is the back of my EPIC5 Router and the IMG1460 is the front of Epic5, 2624 ethernet switch box, and Ruckus. Hopefully this visualization is helpful and insightful.

Thank you for your post and for taking the time to post images. This simplifies the process significantly.
Based on the screenshots, both the Grimm MU1 and the ARC instance in the phone are defaulting to the port forwarding connection, instead of the Tailscale connection. This is partially good news - it means there’s no need to bypass the Ruckus or any other hardware in this setup.
If Tailscale can reach the internet on both the phone and on the RoonServer machine, then you shouldn’t have an issue with your LAN setup.
Instead, let’s test to make sure both the phone and the Grimm MU1 functioning as your RoonServer are using Tailscale to reach the internet.
One option is to install Tailscale directly onto the Grimm. We don’t know if that’s possible, since it’s the Grimm MU1 runs in a custom, Linux-based environment. I would reach out to Grimm support directly to ask how to install Tailscale on that machine, but it will likely require some command lines.
An alternative that we’d posted earlier, but upon which we haven’t elaborated, is to configure the NAS as a Tailscale subnet router, and then install Tailscale on your phone to allow ARC to reach that subnet router.
Tailscale has some steps for setting up subnet routers on NAS machines. You need to configure the NAS to function as a subnet router and then announce itself to the Tailnet. They have specific steps here:

I was in my car and remote earlier today and I tried ARC through my Car Play. It connected and showed my playlist from Roon, my albums, and artists. I selected and album and tried to play it and Arc essentially timed out with “Poor Connection”, I tried an album a playlist and an artist both on my vehicle’s wifi and also tried on cellular and got the same error message. My question is “Is this possible based on the issues I have been encountering?”
