Roon/ROCK support on i9-10980HK 10th gen system

Does Roon on Linux (Debian 11) or ROCK support a system with an i9-10980HK (10th gen) CPU?

RoonServer for Linux is supported on standard Linux distros (Ubuntu, etc). ROCK is supported only on hardware from the approved hardware lists, which are all Intel NUC units. You can see the current list

Technically ROCK is only supported on a number of Intel NUCs but you can try on other platforms and see if it will run. Of course down the road changes might happen that exclude non NUC hardware. I’ve run ROCK (MOCK) on non NUC hardware.
