I cannot update the mac mini to the necessary OS… Alright - it’s time for s nucleus one - it’s not available - hmm - seems to be not the perfect time for the update…
Have you considered getting a NUC and installing Rock on it? This would be your dedicated Roon core machine. Way more options if you do it that way and could well be cheaper and more powerful than a nucleus one.
Chances are that you can update at least to Monterey with OpenCore Legacy Patcher
It should land in a few weeks if you were to preorder.
Set Roon to not auto-update, and you’ll be fine until it arrives.

Virtualization? I don’t use macs, but it seems that virtualbox e.g. is available for mac, install a linux vm and save the money for new hardware, if performance is sufficient.
No, Open Core Patcher. It can install later macOS versions on Intel Macs without virtualization.
If the Intel Mac is just for Roon Server and you consider installing Linux on it, you can simply install Roon Server for Linux directly, no need to run macOS virtualized.
Running Virtualbox on Mac to run a Linux VM with Roon Server would work (and would retain macOS for other stuff, of course) but it is quite convoluted
Roon running in Virtualbox (desktop virtualization) would perform poorly, and the architecture could be wrong, anyway.
If the OP wants to tinker, use OLP. Otherwise, for a friction free experience, go for the Nucleus.
A new M4 Mac Mini, with 16GB of RAM is, in the US, the same price as a Nucleus One : $599USD. This is an amazingly powerful machine at this price and if you’re comfortable running Roon Server on a Mac, this option should be a consideration.
Yep and has more RAM which cannot be understated. The Nucleus One comes with 4 GB and if it needs more than it can be a difficult upgrade for the non-technical.
