I sorted a playlist by Artist name. I started playing a track and was expecting the queue to then be in the sorted Artist’s order. It wasn’t. Looks like the queue is in the original order of the playlist. How do I get the playlist to play in the sorted order that I choose, whether it be by Artist, Album or any other column?

I don’t think you can.
I just noticed this behavior and came here to see if my server was acting improperly!
So, the only purpose for a Playlist sort is to view the sort? Not being able to play the tracks in the order sorted, is astonishingly counterintuitive and simplistic, given Roon’s sophistication.
So I presume after the sort, the workaround is to select all the sorted tracks and create a new Playlist and insert them. From there, they can be played in the original order sorted…
In your playlist
Sort by whatever
Click first track
Shift-click last track, selecting everything
Next to the Play Now button, click the downward-pointing triangle
Add to Queue
Now they will play in the order you chose.
It’s stupid to have to work around this flaw.
