It’s possible that Roon on your Mac has been updated since you last used it. Since version 2.0.25 there has been a major change in that the Roon GUI and Roon Server are now separate applications, whereas previously they were bundled into one application.
Please review the Release Notes - you may need to start the Roon Server application on your Mac manually the first time.
