I also run Roon Server on a headless mac mini m1. Just by accident I found that all of my audio devices reconnected to Roon when I opened the Roon app on the server. The server was already running Roon Server. I closed the Roon application and left server running and the devices are still connected.
This is a very annoying problem. Since updating to Sequoia, I have to go into setting and toggle “local network” setting to get Roon to see my endpoint,I’ve taken to just leaving the Mac and endpoint on all the time which I’d rather not do but until Apple or Roon comes up with a solution it’s easier than having to screen share from another Mac and toggle network settings. I wish Roon would make some kind of formal acknowledgement of this bug.
In one of the many threads about it one of the support guys wrote that it’s under investigation

I’m having the same issue. M1 Mac Mini.
All of my endpoints disappeared the other day. I spent a while turning everything on and off and restarting as per this thread and eventually (after trying all multiple times) the endpoints randomly reappeared. I used Roon without issue that day but today all of the endpoints are gone again. No amount of “off and ons” is bringing them back so Roon is completely unusable for me
