Absolutely - that’s what I do - saved as individual jpegs. You need to ensure that the files are named in the right alphabetic order. Ending each image - page 01, - page 02 etc works for me.
Suggeting this because I just recently got a new scanner. I went with the Espson V39 II over the Canon because the scanning software is better and easier to use in my opinion. I’ve always been a Canon guy but their software always disappointed me–years of experience doing photo archiving.

For eons I’ve longed for a way to save text of all kinds to each album. My music hobby started with LPs and their often extensive photos and texts on the backs of album covers. Or often there would be extra on an insert inside, including full librettos for operas… I loved sitting down to music with the album jacket or any insert in hand and reading all in conjunction while the music was playing. Which often meant I had to listen a second time so I could pay more attention to the music. I liked that Roon included some of that with some albums but I longed for more. I had no idea one could scan content as described in this thread. Can i save as much as I want? Complete librettos? Reviews?
