Dolby Atmos True HD or Auro-3D for multichannel, also available in a stereo downmix:
Note: This versions (a multichannel remaster I suppose) name is “immersive edition” – so it has always the “immersive” in the name no matter if you listen to the multichannel or the stereo version. I expect the stereo version to sound different from the original stereo release because it seems to be a remaster. If it sounds more spatial though in stereo IDK.
For the example of ‘Liberty’ by Anette Askvik, I have the original version and subsequently purchased the Immersive Edition in CD and hires qualities from Qobuz.
My thoughts. The original version sounds better on a stereo setup than either Immersive Editions. So my view would be to hold off buying from Qobuz.
The Apple Music version in Dolby Atmos is such a fantastic mix.
But the two ears together with the brain (as well as other sensory input) combine directional info, runtime differences, reverb, our own body’s reflections, and other inputs, so that we can distinguish sounds arriving at the ears from all three spatial dimensions.

Can a Dolby Atmos be played in Roon and stereo?
Sorry, I don’t have any knowledge about Dolby Atmos
Correct, so if you have a dummy head with one mic in each ear, all of what you mentioned is recorded and then reproduced. For true immersive sound, it needs to be combined with head tracking, but it works without to a good extent.
Interestingly, I’ve downloaded the Dolby app called Dolby On for Android. I’ve imported the hires Immersive Edition and turned on Dolby Atmos and its sounds closer to the Apple Music Dolby Atmos version.
Turn off Dolby Atmos and its sounds ‘meh’
Also worth mentioning here are my headphones support aptxHD and so does my phone.
I own this on CD 2 channel and it is a rather fine album.
It was A challenge to find it on Tidal, but listening to it on my Android TV now on the surround sound system and it sounds great.
