1- I’m using a Synology DS923+ as a Roon Server
2- Yes I can Use Airplay to play to my HomePod Cuisine
3- I can play my Sonos Amp via Airplay but I can’t play my Sonos Amp using Sonos streaming like my Sonos Bureau (see the picture I send You). Only Airplay is available to play music with my Sonos Amp

Thank you, I am not a Sonos user (but have helped create Sonos networks for family members), but are you using Sonos Gen 1 or Gen 2 devices? Also, a number of Roon users have had issues with Sonos products over the past 2-3 years when using SonosNet; they have had better success when connecting directly to the WiFi network as you have done.
The only idea that may be relevant as to why some devices are available using Sonos’ streaming protocol vs. AirPlay may have to do with the network. Every device appears to be on the same subnet (which is good and necessary for Roon to work), but I wonder if the AirPlay-only devices may be on noisy or constrained WiFi band, typically the 2.4 GHz band. Is it possible to connect all the Sonos devices to a 5 GHz WiFi band?
I can’t select wifi bandwidth in my sonos devices settings.
Does you WiFi router off the option to create different SSIDs (the WiFi name) for the 2.4 GHz and 5 GHz bands?
Problem solved. I restarted the Roon app for the server.
