Roon app works on Ipad, and Android phone but no longer on Mac desktop app. Since last update of roon app on Mac I can't connect to my server anymore. I keep getting the message Connect to your roon server ... Find my Roon OS device. When adding the Ip manually it also doesn't succeed to connect to the server.

As a first step, please confirm both your Mac and Linux running Roon Server are on the same local subnet within your network. You can typically check this via your router settings > device list, or you can check both IPs on each device to confirm the subnet is the same. Here’s more info:
for what it’s worth, I had this same issue last night. after many server reboots, both software and hardware, I just went to the Roon site and redownloaded the desktop app.
presto: it immediately connected to my core and all is fine again.
also, the mobile app was completely unaffected, as was the core. I could play music the entire time, just could not control from the desktop.
Thanks for the follow-up! There is not currently an option to download and install previous versions of Roon at this time.
As a next step, it may be worth reviewing one of the myriad network security changes introduced with MacOS 15.x was MAC address randomization.
I recommend navigating to your Network settings (WiFi → Details) and checking whether the Mac in question is relying on a Fixed, not a rotating, Private WiFi Address.
