My Roon server went down a couple of weeks ago. Now I just get:
Searching for network address…
If this persists, please check your network connection.
I’m guessing that the ethernet port on the thing got fried when lightning hit very near my house. The server is installed on an Intel NUC, and I don’t think I can replace or repair the integrated ethernet. That being the case, I’ve ordered a replacement NUC, which is on its way.
I’m currently wondering, though, how I can log on to the device to retrieve my backups, which are stored on the M.2 drive?
You might be able to get a USB ethernet dongle to work?
Also, are you saving your back-ups on the OS drive?
That is NOT recommended. I would recommend doing backups to an external location (either USB, or network drive). Two locations not on the NUC would be better than one.

Edit: Are you transferring the drives from your old NUC to the new one? If you are re-installing ROCK and you had and internal drive I would get ROCK up and running and then install the drive internal drive (not the M.2 OS drive, but the internal storage drive).
You may not be able to follow all these directions but:
Stored on the M.2 drive? The OS drive cannot be used as a backup location, only external USB drives or network locations. Also, any internal music storage drive should never be used as a backup location.
