my mac can see the dac and even play through it but it no longer shows up in roon audio-settings.

Can you please confirm, does the Mac see the DAC through Roon or through another app? Have you rebooted your Core and the behavior is the same?
Have you by any chance tried a different USB cable and it has the same issue?
Have there been any firmware updates recently? Was this DAC ever working in this setup and this a recent issue?
Do other devices still show up under Roon audio-settings or are all devices missing?
Also, what does your network setup look like, can you please provide some more details on the router model/manufacturer?
