It looks like you’ve hit the new OS requirement wall.
As of the April 27 update, Roon officially requires macOS 12 or higher.
However, you can try using a temporary installer to get back up and running for the time being. You can find the relevant links and details in this release thread:

Keep in mind:
- Temporary Fix: This installer is a workaround, and long-term support for older macOS versions is not guaranteed.
- Future-Proofing: Since your iMac (Late 2012) is officially capped at Catalina, you might eventually need to consider using OpenCore Legacy Patcher (OCLP) to install a newer macOS version.
- Alternative: If your iMac is dedicated solely to being a Roon Server, switching the operating system to Linux (like Ubuntu or Roon OS via ROCK) is a great way to keep the hardware relevant without the macOS software restrictions.
