The core is the Mac Mini - don’t really understand what is network dependent. Everything is wired or local except internet connection!
I really can’t help with the why’s and what’s behind the Roon architecture I’m afraid.
Tbh I would try a long cable before going the eOp route…another " evil" frowned upon by Roon…lol.
And seriously they really can be problematic.
I use a 75ft cable to get from my upstairs router down to an unmanaged switch in my music room.
Much better than WiFi or eOp in my circumstances.
