I install Roon Rocks on a Intel NUC7i7BNH. I try to plug a Schiit Bifrost (Model SCH-04 E) on the usb port, Roon core don’t detect it. The music is store on the internal drive. My Mac can detect it without any problem.

Moving forward, I have access to Schiit Bifrost (Model SCH-04) and as you can see when mounted to my NUC w/ROCK via USB the device is being seen without issue:
The Bifrost I have access to has the Gen2 board in it and my understanding of the Model SCH-04 E like you have has to do with one of the upgrades that Schiit offers for the Bifrost on their website. Can you verify for me if the unit you have is making use of any of the offered upgrades by Schiit?
