It’s difficult to comment on this video given that the Roon setup is not explained (i.e., location of core/music (NAS, laptop, hardrive, etc.), how the music is delivered (usb, Ethernet, wifi, fiber optic, etc.), are they doing any processing within Roon or simply using it to deliver files to an endpoint…??? It’s possible that a dedicated music server might outperform a given Roon system (and might have more to do with hardware), but I think the Roon experience is very personal depending on one’s own setup/needs. I personally don’t do any processing within Roon as I use my DAC as an endpoint and it would make it mor difficult to evaluate the DAC on its own merits. As I can stream through my DAC and have a CD transport connected to it as well, a valid question might be: which sounds better, the CD version or the streamed version from my NAS/Qobuz? Important thing is to make a connection with the music that is meaningful.
Unfortunately, you will never be able to compare that, because your never know which master is used by the streaming service.
You are correct - I can only compare the files burned to my NAS vs. the CD version in my collection.

Since Suncoast is a B&M dealer it would be interesting to compare an ideally configured Roon setup to this Taiko box in their store. Same source file, levels matched to 0.1 dB, no dsp, no one telling you what to expect, same DAC used for both. Maybe even blind or double blind. Invite a few of your friends. Make a day of it. Determine if the differences noted are real or occur in the listener’s auditory cortex.
