Updating ROCK and changing NUC to boot from UEFI, not Legacy (ref#QOL1KE)

I’m not sure what happened on the automated help, but I didn’t get a chance to explain the issue… so here goes.

I am running Roon ROCK on my NUC which I have been able to access via ARC up until I recently changed my ISP. The new ISP uses CG-NAT, so I cannot access ARC in the way I have previously done. I am now trying to set up access to ARC outside the house via Tailscale. I have followed the instructions on here for setting up Tailscale, but I cannot get the Tailscale tab to appear in my Roon OS. Having done some reading on here, I understand I need to be on a later version of the Roon OS (I am on version 1, build 259) but I cannot get any later version by clicking on the REINSTALL tab in the Roon OS screen. I believe the two things I need to do are update the Roon OS and change my NUC Bios to boot from UEFI instead of legacy. I have tried to change the bios settings in the NUC to allow UEFI, but I cannot currently drag/drop the boot drive into UEFI as it stands. I’m not sure if this is due to the BIOS being too old, so I have been on the INTEL website to see if there is a Bios update for my NUC. The site is quite poor and after more than an hour of searching around, I cannot find any sign of a BIOS update for my NUC.
So, my question is, do I need to somehow erase the current ROCK on my NUC and install the latest version, and if so, will this then allow me to use the UEFI boot so I can see the Tailscale tab in the Roon OS?

You can’t switch from Legacy Boot to UEFI after installing the operating system because the two methods create a totally different boot data layout on the disk. You have to choose UEFI before installing the OS. Meaning that you now have to reinstall from scratch. This will probably help:

UEFI and BIOS Legacy are incompatible. When you change your BIOS to use UEFI, your old drive will be unreadable and you will need to re-install ROCK from scratch using the UEFI ROCK build.

Ok, I have a backup of my database, so I can install the latest version of the Roon OS from scratch then. Do you know if I need to somehow delete the current version from the SSD first, or when I do the USB install of the latest build, will that overwrite what’s already on there?
