Looks like it could be HDR processed?
Just checked the Iphone and yes HDR is active. To be honest I just point and shoot, no idea if HDR is good or bad?
Same beach earlier in the day.
HDR results in greater dynamic range, i.e. higher contrast.
They have a distinctive look, most noticeable in your 7PM picture.
Whilst we are on the subject - any idea what could cause the blue dot (UFO) in the below image? Again taken on the same Iphone.

Probably is a UFO. It’s only a matter of time.

If HDR is active the iphone will use several images with different exposure and stack them together in software. This will result in an overal less contrasty image where both highlights and shadows are pushed.
While this does help to avoid under and overexposure in the image it will kill the natural colors.
If you are after true colors and an unprocessed look turn it off !
It’s always better to bracket yourself and merge the images later on.

That ufo is nothing more then lens flare unfortunately…
This is a frequent occurence with iPhones. It is caused by lens flare or bloom in a shot in which there is a strong light source. Changing the angle will sometimes eliminate it. If you look closely, you see the artifact is on the lens and not in the scene.
I still reckon one of those “Bulls*it or Not” tv shows would pay big money for this
